DIY Hamburger Helper: Italian Style

What you need:

    • 12 oz. rotini pasta
    • 1 lb. Italian sausage
    • 1 can (14.5 oz.) diced tomatoes
    • 1 Tbsp. dried minced onion
    • 1 clove garlic, minced
    • 1 tsp. dried parsley
    • 1 tsp. dried oregano
    • 1 tsp. dried basil
    • 1 can (14 oz.) tomato sauce
    • 1 cup fresh baby spinach leaves
    • 1 to 2 Tbsp. milk
    • 1/2 cup shredded mozzarella cheese, plus some

Directions:

    1. Brown and crumble the Italian sausage in a large, deep skillet. Drain, if needed.
    2. Add diced tomatoes (with juices), minced onion, garlic, parsley, oregano, and basil. Stir.
    3. Then add 1 can of tomato sauce, stir, and simmer for about 10 minutes.
    4. Meanwhile, cook pasta according to package directions. Drain and set aside.
    5. Add spinach and 1 to 2 Tbsp. milk to sauce. Stir and cook until spinach has wilted.
    6. Add cooked pasta to sauce and stir.
    7. Top with 1/2 cup cheese and let melt. Serve topped with additional cheese, if desired.
