Candy Corn M&M Cheesecake Cookies

What you need:

    • 2 sticks unsalted butter, at room temperature
    • 1 cup brown sugar
    • 2 eggs, at room temperature
    • 1 tsp. vanilla
    • 1 box (3.4 oz) cheesecake-flavored instant pudding
    • 2 1/4 cups flour
    • 1 tsp. baking soda
    • 1 bag candy corn M&Ms

Directions:

    1. Cream together butter and sugar until light and fluffy, about 3 to 5 minutes.
    2. Add eggs, one at a time, beating for about 15 seconds after each addition.
    3. Mix in vanilla. Then add dry pudding mix.
    4. Add flour and baking soda, mix until just combined.
    5. Stir in M&Ms with a spatula.
    6. On a parchment paper-lined baking sheet (or one with a silicone mat), using a cookie scooper, place dough in rounds 2 inches apart.
    7. Bake in a preheated-350* oven for 10 to 12 minutes.
    8. Remove from oven and let rest on pan for 2 minutes, then remove to wire rack to cool.
    9. Makes around 3 dozen cookies.
