Soft Oatmeal Molasses Raisin Cookies
What you need:
- 2 cups flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 cup brown sugar
- 1 1/2 sticks butter, softened
- 2 cups old fashioned or quick oats
- 2 eggs
- 2 Tbsp. molasses
- 1 Tbsp. milk
- 1/2 to 1 cup raisins
Directions:
- Cream together butter and brown sugar. Then add eggs, molasses, and milk.
- Add oatmeal and mix well.
- In a separate bowl, mix together flour, baking powder, baking soda, and salt.
- Slowly mix in dry ingredients into wet ingredients.
- Stir in raisins.
- Using a scoop, place balls of dough on a parchment or Silpat lined cookie sheet.
- Bake at 350* for 12 to 13 minutes. Let cool for 2 minutes on cookie sheet before removing to wire rack.
