Spicy Pork & Kale Soup

What you need:

    • 1 lb. ground pork
    • 1/2 tsp. ground ginger
    • 1/4 tsp. ground black pepper
    • Zest of half a lemon
    • 3/4 tsp. red pepper flakes
    • 1/2 tsp. ground cumin
    • 2 cloves garlic, minced
    • 1 tsp. vegetable oil
    • 4 to 5 cups chicken broth
    • 1 to 2 bunches kale, chopped
    • 2 Tbsp. soy sauce
    • 8 oz. rice noodles

Directions:

    1. Heat oil in a large pot over medium high heat. Add ground pork and season with the ginger, pepper, lemon zest, red pepper flakes, cumin, and garlic. Cook and crumble.
    2. Once pork is browned, add chicken broth and soy sauce. Bring to a boil, then reduce heat and simmer for 5 to 10 minutes.
    3. Add kale, stir, and simmer for about 10 minutes.
    4. Meanwhile, cook the rice noodles according to package directions. Drain and rinse with cold water.
    5. Serve soup with rice noodles on bottom and soup ladled on top.
