Berliners

What you need:

    • 1 cup warm milk
    • 3 Tbsp. unsalted butter
    • 2 1/4 tsp. active dry yeast
    • 3 1/2 cups cake flour
    • 3 Tbsp. sugar
    • 1/2 tsp. salt
    • 3 egg yolks
    • Oil for frying (I used vegetable)
    • Jam or Nutella for filling
    • Powdered sugar for dusting

Directions:

    1. In a measuring cup, combine milk and butter. Stir until butter melts. Stir yeast into the milk and butter. Let stand for 10 minutes until foamy.
    2. In a food processor, pulse flour, sugar, and salt.
    3. Add milk and egg yolks, and pulse until a smooth dough forms.
    4. Put the dough into a lightly greased bowl and cover. Let rise for about 1 hour or until doubled.
    5. Roll dough onto a lightly floured surface - about 1/2 inch thick.
    6. Cut dough into rounds using a 3-inch "cookie" cutter. Let doughnuts rise for about 30 minutes.
    7. Preheat oil (in a large saucepan or deep fryer) to between 350* to 375*. Fry doughnuts 3 at a time until they are golden brown on each side.
    8. Place on a paper towel lined plate. Repeat until all doughnuts are fried.
    9. With a pastry bag fit with a tip, fill with jam or Nutella.
    10. Sift powdered sugar on top!
