Berliners
What you need:
- 1 cup warm milk
- 3 Tbsp. unsalted butter
- 2 1/4 tsp. active dry yeast
- 3 1/2 cups cake flour
- 3 Tbsp. sugar
- 1/2 tsp. salt
- 3 egg yolks
- Oil for frying (I used vegetable)
- Jam or Nutella for filling
- Powdered sugar for dusting
Directions:
- In a measuring cup, combine milk and butter. Stir until butter melts. Stir yeast into the milk and butter. Let stand for 10 minutes until foamy.
- In a food processor, pulse flour, sugar, and salt.
- Add milk and egg yolks, and pulse until a smooth dough forms.
- Put the dough into a lightly greased bowl and cover. Let rise for about 1 hour or until doubled.
- Roll dough onto a lightly floured surface - about 1/2 inch thick.
- Cut dough into rounds using a 3-inch "cookie" cutter. Let doughnuts rise for about 30 minutes.
- Preheat oil (in a large saucepan or deep fryer) to between 350* to 375*. Fry doughnuts 3 at a time until they are golden brown on each side.
- Place on a paper towel lined plate. Repeat until all doughnuts are fried.
- With a pastry bag fit with a tip, fill with jam or Nutella.
- Sift powdered sugar on top!
