Chicken Caesar Grilled Flatbread Pizza

What you need:

    • 2 chicken breasts or 5 to 6 chicken tenderloins, cooked and seasoned (I did mine with garlic powder, onion powder, salt, and pepper)
    • Flatbread
    • Romaine lettuce
    • Caesar salad dressing
    • Croutons
    • Grape tomatoes
    • Parmesan cheese
    • Olive oil

Directions:

    1. Cube chicken and heat up your grill pan or preheat your oven.
    2. Drizzle olive oil on the flatbread and cook for 2 minutes on one side and 1 1/2 on the other on grill pan - or cook for 2 to 3 minutes in the oven.
    3. In a large bowl, toss lettuce and dressing. Divide between flatbread pieces. Add croutons, cheese, and grape tomatoes. Season with salt and pepper and serve!

Note: I made one serving of this and reserved the extra chicken (and, of course, all the veggies which I normally have on hand for Caesar salads) to make this again another day.
