Southwest Tuna Salad Sandwiches
What you need:
Dressing:
- 2 Tbsp. mayonnaise
- 2 Tbsp. sour cream
- 2 Tbsp. lime juice
- 1/2 tsp. garlic
- 1/2 tsp. ground cumin
- 1/4 tsp. chili powder
- 1/8 tsp. pepper
- Salt, to taste
- Hot sauce, to taste
"Salad":
- 2 cans (6 oz each) tuna, drained
- 1 can (4 oz) diced green chillies, draned
- 1/4 cup diced green bell pepper
- 1/4 cup diced red bell pepper
- 1/4 cup diced onion
- 2 Tbsp. cilantro, minced
- 1/4 cup diced tomato
Directions:
- Mix together dressing ingredients in a small bowl.
- In a separate bowl, mix together "salad" ingredients. Add dressing and mix well.
- Refrigerate one hour to let flavors meld together.
- Serve on a bun or bagel with cheese. We love doing bagels, but didn't have any on hand when I made them.
