Southwest Tuna Salad Sandwiches

What you need:

Dressing:

    • 2 Tbsp. mayonnaise
    • 2 Tbsp. sour cream
    • 2 Tbsp. lime juice
    • 1/2 tsp. garlic
    • 1/2 tsp. ground cumin
    • 1/4 tsp. chili powder
    • 1/8 tsp. pepper
    • Salt, to taste
    • Hot sauce, to taste

"Salad":

    • 2 cans (6 oz each) tuna, drained
    • 1 can (4 oz) diced green chillies, draned
    • 1/4 cup diced green bell pepper
    • 1/4 cup diced red bell pepper
    • 1/4 cup diced onion
    • 2 Tbsp. cilantro, minced
    • 1/4 cup diced tomato

Directions:

  1. Mix together dressing ingredients in a small bowl.
  2. In a separate bowl, mix together "salad" ingredients. Add dressing and mix well.
  3. Refrigerate one hour to let flavors meld together.
    1. Serve on a bun or bagel with cheese. We love doing bagels, but didn't have any on hand when I made them.
