Ham & Cheese Gnocchi
What you need:
- 1 Tbsp. butter
- 1 onion, diced
- 12 oz. diced ham
- 1/2 cup chicken broth
- 3/4 cup water
- 16 oz. potato gnocchi
- 1 cup frozen sweet peas
- 1/4 cup heavy cream
- Salt and pepper, to taste
- 1 cup shredded cheese (we used Gruyere - would love to try cheddar!)
Directions:
- Melt butter in a large cast iron skillet. Add onions and saute until softened and browned.
- Add ham and cook until ham is lightly browned.
- Add chicken broth and water. Bring to a light boil.
- Add gnocchi and stir.
- Cover and cook for about 5 minutes, until gnocchi is almost done.
- Stir in peas, cream, and salt and pepper. Adjust salt and pepper to taste.
- Top with cheese and stick under a broiler for a few minutes until cheese is melted and golden brown.
