Ham & Cheese Gnocchi

What you need:

    • 1 Tbsp. butter
    • 1 onion, diced
    • 12 oz. diced ham
    • 1/2 cup chicken broth
    • 3/4 cup water
    • 16 oz. potato gnocchi
    • 1 cup frozen sweet peas
    • 1/4 cup heavy cream
    • Salt and pepper, to taste
    • 1 cup shredded cheese (we used Gruyere - would love to try cheddar!)

Directions:

    1. Melt butter in a large cast iron skillet. Add onions and saute until softened and browned.
    2. Add ham and cook until ham is lightly browned.
    3. Add chicken broth and water. Bring to a light boil.
    4. Add gnocchi and stir.
    5. Cover and cook for about 5 minutes, until gnocchi is almost done.
    6. Stir in peas, cream, and salt and pepper. Adjust salt and pepper to taste.
    7. Top with cheese and stick under a broiler for a few minutes until cheese is melted and golden brown.
