Opening:
Grab the large serving cambro that houses the "made" batch of cold brew from the kitchen walk in and place on grey cabinet by front door.
Assess if you need more cold brew made to add to it.
If you need to "make" another batch: take the concentrated small cambros from the kitchen walk in and dump it into the serving cambro. Fill the cambro you just emptied to the same level with filtered water from the CS water station. Dump that water in the serving cambro. It's a 1:1 ratio. It takes up most of the serving cambro so wait until it is like actually empty before you do this, as to not cause any over flow.
Grey cabinet should have on it: sugar, Stevia, straws, napkins and lids to the right of the cambro; on the left plastic cups and the ice scoop (make sure there is a rag under the cambro, cups and ice scoop to be placed on).
The blue small ice cooler should be filled with ice and place the lid on it.
Service:
Place ice in the plastic cup and fill with cold brew. Put ice scoop back on cabinet (do not leave the ice scoop in the cooler w the ice).
Ask customer if they would like oat or regular whole milk. Take out of the front door fridge.
Pour their milk of choice for them and ask them just to let you know 'when'.
If you let them pour the milk, wipe down milk lids and containers after with a sani wipe and place back in the front door fridge.
Show the customer where the sugar, stevia, lids, napkins and straws are for self service.
Close:
Dump the ice from the blue cooler out in the street.
Place the large serving cambro in the kitchen walk in.
Things to note:
James is in charge of making the actual cold brew concentrates, which should be labeled as such and dated each time it's made.
Oat milk, once opened must be in the fridge.
If you take another box of oat milk from the open case on the front ledge, please stick mark it on the box on we can keep track of how much we use.
Keep an eye on the date of the milk and throw out on its due date.
Extra lids, straws and oat milk are in the small cubby under the stairs, behind the front door bench.
The 16oz cups are housed in the ADA.
Sugar and Stevia are stored behind the steel gated door, where the built in CS garbage goes into, on the CS window ledge.
