Black Bean and Corn Salad
1/4 Cup Olive Oil
2 teaspoons honey
3 limes, juiced
2 15 oz. cans black beans, rinsed
1 cup corn kernels
1 diced red or orange bell pepper
1 bunch of scallions, chopped
1/2 cup cilantro
Salt and pepper to taste
1 diced avocado
Whisk together the oil, honey and lime juice. Toss with the remaining ingredients except avocado. When ready to serve, peel and dice the avocado and add to the salad. Toss to combine.
