Ratatouille

Here's what you need:

  • 8 cups of unsalted vegetable stock
  • 8 Celery Stalks (chopped)
  • 1 large Onion (chopped)
  • 4 Garlic Cloves (minced)
  • 1 Butternut Squash (or other seasonal vegetable)(chopped)
  • 4 Cups Green Beans (cut into inch segments)
  • 4 Carrots (cut into inch segments)
  • 2 Cups Snow Peas (whole or chopped)
  • 1 can on White Kidney Beans
  • 1 can of Red Kidney Beans
  • 1 can of Tomato Paste
  • 1 large can of Crushed Tomatoes
  • 4 Red Potatoes (chopped)
  • 4 Cups Water
  • 2 TBSP Grapeseed Oil


Directions:

Heat the oil in a large and deep soup kettle. When the Oil is hot add the Garlic and Onion. Stir occasionally. When the onion is translucent add the Vegetable stock. Then add in the rest of the ingredients. Turn up the heat and make the soup boil. When it starts to boil reduce it to a simmer. Let is simmer for 30 minutes to a few hours. Serve and enjoy this super healthy, delicious, vegetable filled soup!
