Apple Squash Soup
Do you like soup? What about Apples and Squash? Perfect! Then this Apple Squash Soup is right up your alley! Our simple and easy to follow recipe is perfect for any cool Fall day. Pick some apples, grab a squash and make your very own hearty and healthy meal!
Here's what you need:
- 1 Butternut Squash (cooked or chopped)
- 3 Apples (chopped)
- 1 Onion
- 4 Cups of Unsalted Vegetable Stock
- 2 TBSP Olive Oil (or another kind)
- 1 tsp Ground Cumin
- 1 tsp Paprika
- 1/2 tsp Pepper
- 1/8 tsp Cayenne Pepper
Clean the squash. Then cut the top and bottom of and then cut in half the long way. Clean out the seeds. Cook the squash until it's soft. You can do this either in the microwave or in the oven (at 350 degrees for 1.5 hours). Heat a large pan with the oil. When the oil is hot add the onions. When they are halfway translucent, add the apples. If you did not precook your squash, add it at this time. Stir and cook until onions are finished. Then add 2 cups of the vegetable stock. If you precooked your squash add it now. Add the Cumin, Paprika, Pepper, and Cayenne Pepper. Let it cook until apples (and squash) are soft. Carefully put mixture into a blender and blend. (You could also use an immersion blender if you like) Add more stock until it reaches your preferred thickness. Then keep heated, add some croutons if you like, and enjoy!
