Who doesn't love lemon bars? They are one of my absolute favorites and this recipe is sure to please not only your taste buds but your waistline. We reinvent these tasty bars into something that is equally as tasty and easy to make! Perfect for the holidays or anytime! Be sure to give them a try and share with us what you think of them!
Here's what you need:
- 7 sheets of Honey Graham Crackers (crushed)
- 2 TBSP Unsalted Butter (melted)
- 8oz Cream Cheese (low fat if possible)
- 3/4 Cup Greek Yogurt (Vanilla or Plain)
- 3 Eggs
- 1/3 Cup Honey (or sugar)
- 1/3 Cup Lemon Juice (2 Lemons)
Preheat Oven to 300 degrees. Tear off Parchment paper to fit into a 8" x 8" pan. (You don't need the parchment paper but it is nice to have) . Pour the crushed Graham Crackers and melted butter on the paper in the pan. Stir the butter into the crackers and then firmly push to the mold to the bottom of the pan. Place it in the oven for 8 minutes.
As the crust is cooking start the filling. Blend the Cream Cheese until it's smooth. Then add the Greek Yogurt and stir until it's combined. Then add the Eggs and stir again. Finally add the Honey and Lemon Juice and stir until it's smooth. When the crust is finished take it out and pour the filling into the pan. Place in oven and let it cook 25-30 minutes or until a toothpick comes out clean.
Let it air cool for 30 or so minutes. Place in the refrigerator for 3 hours or overnight. When it is cooled lift it out of the pan using the parchement paper and cut into squares.
