Fresh Salmon with Squash and Sweet Potato

There's nothing quite like a freshly caught salmon! Especially when you catch it during a tournament on Lake Michigan. Check out this simple recipe that is a must try the next time you have Salmon.

Here's what you need:

  • 2 portions of Salmon
  • 1 Butternut Squash (chopped)
  • 1 Sweet potato (chopped)
  • Lemon Juice
  • Olive Oil (spray and liquid)
  • Dried Parsley
  • Paprika
  • Savory
  • Rosemary
  • Pepper
  • 2 Cloves of Garlic (chopped)
  • 1/4 cup parmesan cheese
  • Tin Foil

Directions:

  • Preheat oven to 400 degrees. Sprinkle Lemon Juice on the salmon to help it firm up if needed. Combine 1 TBSP of olive oil, Parmesan Cheese, about 75% of the chopped garlic, and a couple shakes of Paprika and Pepper. Stir until cheese is soaked in the olive oil. Spray the Tin Foil with some oil. Place Salmon on the oven pan covered with Tin Foil Spread the olive oil and Parmesan Cheese mixture over the Salmon. Cover with another sheet of Tin Foil. (No need to seal it tight) Place in the oven. Let it cook for 20-25 minutes.

Then heat up a pan with a little oil on medium heat. When the oil heats up add the chopped the squash and sweet potato. Add a pinch or two of Rosemary, Savory, and Parsley. Stir occasionally so it doesn't stick. When they become soft, take off the heat and serve.

The Salmon should be done or close to done by this time. When it is finished take out of the oven and plate with the potato and squash. Then enjoy!
