Cool weather means it’s time for some hearty stew. This simple and easy recipe will be sure to warm the hearts and stomachs of your entire family! Give it a go and be sure to share a picture of your meal on social media. Don't forget to tag us in it!
Ingredients:
1 1/2 lbs lean stew meat
1 large onion (chopped)
4 stalks of Celery
4 carrots (chopped)
4 tomatoes (chopped)
4 garlic cloves (minced)
4 Red Potatoes
1 tsp Black Pepper
1/4 tsp Salt
1 TBSP olive oil
8 cups Unsalted Beef Broth
1 Tsp of smoked paprika to the ingredient list
Here's how you make it:
Turn the burner on high, and set your big kettle on it. Put about one Tbsp of olive oil in the bottom of the kettle. As the kettle is heating up, pour the stew meat in. While the meat is cooking, cut up your red potatoes. Once the meat is browned and mostly-all the way cooked through, you’re going to pour the meat onto a plate. Turn the heat for the burner down a little bit, and set the kettle back onto the burner. Put the onions into the now empty kettle, along with the garlic, carrots, and celery. Put in about 1 Tsp of smoked paprika, and 1 Tsp of black pepper. You can add the salt, that is optional. Stir everything, and try to get all of the caramelized stuff off of the bottom from the meat. Turn your burner back on high, and add 1 cup of broth. Stir again, and add red wine if you choose to do so. Make sure you do not cook the vegetables so long that they burn, but you also want the broth to reduce down. Once this has happened, add the tomatoes, and stir. Put the stew meat back into the kettle, along with the other 7 cups of broth. Stir, and add the red potatoes. Cover the kettle, but not completely, so that some steam can escape. Turn the burner to medium/medium-high, and stir occasionally. Let it simmer for about an hour to an hour and a half, or until your meat and potatoes are soft. Once this is done, in a separate bowl, mix together 2 Tsp of cornstarch and 2 Tsp of water. Mix this into the stew, and you’re done!
