Pineapple Rhubarb Sorbet
This summer time treat is so simple to make and is ridiculously refreshing! Whether you are using just fresh fruit or a mix of fruit and fruit juices this dessert is perfect for those hot summer days!
Here's what you need:
- 1 Cup of Rhubarb
- 1 Cup of Pineapple
- 1/2 cup of orange juice (or water)
- 2 tbsp Honey
- Almond Milk (as much as is needed to blend smoothly)
Add Rhubarb to a pan over medium heat. Add Orange Juice and Honey. Stir occasionally until Rhubarb is starting to turn soft. Add Pineapple and continue to heat and stir occasionally until it is soft. When it is soft, put ingredients in a blender. Blend them together, adding Almond Milk as needed for it to blend smoothly. When it is smooth put back in the pan and reduce down to a desired thickness. Put in a freezer safe bowl and place in freezer. Stir every hour or two until either you go to bed or it is frozen. Spoon into a dish and enjoy
There are so many combinations and options with this delicious dessert. Think of any fruit combo and give it a try! You don't even need to heat them up in a pan. You can just blend and freeze it if you like. Reducing it down will help concentrate the flavors and make it thicker but that's it. Experiment and have fun with this recipe.
