Fruit Pizza

What you need:

  • Seedless Watermelon
  • Berries (blueberries, raspberries, strawberries, etc)
  • Mandarin Oranges
  • Greek Yogurt (any flavor)

Directions: Cut the Watermelon into ½”-1” thick plates. Then cut the plates into 8 pie-shaped pieces. Spoon a dollop of Greek Yogurt onto each slice and spread around. Top with your favorite berries and oranges and enjoy!


Fruit Nachos

What you need:

  • Apples
  • Pears
  • Peanut Butter
  • Greek Yogurt (any flavor)
  • Berries (blueberries, raspberries, strawberries, etc)

Directions: Slice Apples and Pears in half and cut out the core and stems. Slice each section of the fruit into thin chip size pieces. Place on plate laying each slice on each other creating rows. Heat Peanut Butter for a few seconds in the microwave and drizzle on top of the sliced apples and pears. Gently dollop the Greek yogurt on the slices in a few random places. Add your favorite berries on top and enjoy!


Peanut Butter Energy Balls

What you need:

  • 4 Cups Rolled Oats
  • 2 Cups Peanut Butter
  • ½ Cup Nuts
  • ½ Cup Craisins or Raisins
  • ½ Cup Semi Sweet Milk Chocolate Morsels

Directions: Combine ingredients in a large bowl. Mix them up and then place in the freezer for 10 minutes. After the 10 minutes take them out and form into balls using your hands. Pack them for lunches, snacks, or just enjoy them!


French Toast Bake

Here’s what you need:

  • 8-9 slices of Whole Wheat Bread (or your favorite healthy bread)
  • 5 eggs
  • 1 cup milk (dairy, almond, coconut, whatever)
  • ¼ tsp Almond Extract
  • ½ tsp Cinnamon
  • ½ tsp Nutmeg
  • 3-4 Apples
  • Honey

Directions: Cut the bread into small squares and then place in a large baking dish. Whisk the Eggs, Milk, Extract, Cinnamon, and Nutmeg together. Pour over the cut bread. Cut the Apples into bite size pieces and then place on top of the bread and liquid. Drizzle Honey and sprinkle some Cinnamon on top of the apples. Cover and let sit in the refrigerator overnight. In the morning heat oven to 350 degrees. Cook the French Toast Bake for 45-50 minutes or until a knife comes out clean.
