Shepherd's Pie

Here's what you need:

  • 2 Chicken Breasts (cubed)
  • 1 Garlic Clove (minced)
  • 1 Squash (chopped)
  • 1 Broccoli Crown (chopped)
  • 2 Carrots (chopped)
  • 3 Medium Red Potatoes
  • 1/8 cup shredded Cheddar Cheese
  • 1 TBSP Oil
  • Salt & Pepper to taste

Directions:

Cook the Red Potatoes until they are soft. (In the oven or microwave). Heat a pan with the oil. When the oil is hot add the Garlic and Chicken. Stir occasionally to avoid burning until the chicken is cooked halfway. As the chicken and garlic are cooking cut the red potatoes into cubes and then mash them with a fork or potato masher. Add the Cheddar Cheese, Salt, and Pepper to the mashed potatoes and stir together. When the chicken is halfway done, add the Squash, Broccoli, and Carrots. Stir occasionally until the chicken is fully cooked. Put chicken and veggie mixture into an oven safe dish. Spread the mashed potatoes on top of the mixture. Place in the oven with the broiler on high. Leave it in the oven for a few minutes. Check it often and when the mashed potatoes start to brown, take out, serve, and enjoy!
