Vegetable Curry with Pork

We're are mixing it up and making this quick and simple dinner. You can make the with pork, chicken, beef, tofu, or just vegetables. I know your family is going to love it! Know someone who likes curry? Tell them about this recipe today!

Here's what you need:

  • 1 Onion chopped
  • 3 Cloves of Garlic cloves chopped
  • 1 cup or so Cauliflower chopped
  • 2 cups or so Cauliflower cut into bite sized people
  • 2 cups Broccoli cut
  • 2 Peppers sliced
  • 1 cup or so of Pork (or other meat if you wish) thinly sliced
  • Splash of Milk (Dairy, Almond, Coconut, it's all good)
  • 1 TBSP butter
  • 1 part Paprika
  • 1 part Cumin
  • 1 part Curry
  • Water
  • Oil

Directions:

SAUCE

  • Put a pan on the stove on high heat
  • Add butter
  • When butter is melted add chopped Cauliflower, Garlic, and Onions
  • Add Paprika, Cumin, and Curry. (Taste to see how much you like. Start with less tha add as needed
  • When the onions become translucent put the mixture in a blender. Add milk and blend. If needed add some more milk or water
  • Blend until smooth and then take off the base and leave in the blender

PORK and VEGETABLES

  • Put pan that the sauce was in back in high heat and add oil
  • Add Pork or other meat and cook until 75% done
  • Then add in the rest of the Cauliflower, Peppers, and Broccoli
  • Cook until they begin to be soft
  • Add sauce
  • Heat entire mixture until sauce is desired consistency (May need to add water/milk if needed)

Feel free to add salt and pepper as needed
