Frozen Berry Chantilly Cake

The Fourth of July is a few days away and in normal Wisconsin fashion the heat and humidity of summer are here in full force. You almost break a sweat just by stepping outside! Thankfully this recipe will keep you cool. Plus it's super easy to make and will keep you on track with your diet goals. So why wait? Here's what you need:

  • 1 pint of Heavy Whipping Cream (You could use Coconut Cream if you wanted to make it vegan)
  • 2 cups of fresh fruit (I used Blueberries and Strawberries) (You could use frozen fruit if you like)
  • 2 TBPS Honey
  • 1-2 TBSP Pure Maple Syrup
  • 1 TBSP Lemon Juice

Directions:

In a pan heat the fresh fruit on medium heat. Add Lemon Juice and Honey. Stir occasionally until fruit is soft. Transfer the fruit into a blender or ninja and pulse until mixed. Put in the refrigerator until thoroughly cold. Then add the heavy whipping cream in a chilled bowl. Whisk using a hand mixer, kitchen aid, or something similar. When it starts to get frothy add the Pure Maple Syrup. Continue mixing until the the cream forms stiff peaks. Then refrigerate. When both the Fruit and Whipped Cream are chilled gently fold together keeping as much froth of the whipping cream as possible. Transfer to a bread pan or something similar in size. Cover with seran wrap and store in the freezer. When you're ready to enjoy, slice and place on a fit
