Ingredients:
4 large eggs, separated
1½ cups (350 grams) non-fat Greek yogurt
⅝ cup (70 grams) monkfruit sweetener
⅓ cup (40 grams) cornstarch
1 teaspoon vanilla extract (optional)
Instructions:
Preheat the oven to 330°F (160°C).
Line a 7x11-inch baking dish with parchment paper.
Separate the egg yolks from the whites, making sure no yolk gets into the whites.
In a clean mixing bowl, beat the egg whites until stiff peaks form. Transfer them to a separate bowl.
In the same mixing bowl, beat together the egg yolks, monkfruit sweetener, and optional vanilla extract until light and fluffy.
Add the Greek yogurt to the yolk mixture and mix until smooth.
Sift the cornstarch into the batter and mix until fully incorporated.
Gently fold the beaten egg whites into the batter in batches, being careful not to deflate the mixture.
Pour the batter into the prepared baking dish and smooth out the top.
Place the baking dish into a larger tray and pour hot water into the tray to create a water bath (the water should come about ¼ to ⅓ up the sides of the baking dish).
Bake at 330°F (160°C) for 45 minutes. Then increase the temperature to 350°F (180°C) and bake for another 15 minutes.
Once baked, turn off the oven, crack the oven door open, and let the cake cool inside for 1–2 hours to prevent it from deflating.
