2 boneless, skinless chicken breasts (about 1.3 lbs total)
1/2 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon freshly cracked black pepper
1/4 cup all-purpose flour
2 tablespoons olive oil
2 tablespoons butter, divided
1 whole garlic bulb (about 8–9 cloves), peeled and smashed
1 cup chicken broth
3/4 cup heavy cream
1/2 teaspoon garlic powder
Salt and pepper to taste
Prep the Chicken:
Slice each chicken breast in half horizontally to make cutlets. Season with Italian seasoning, salt, and pepper. Lightly coat both sides with flour, pressing to adhere.
Sear the Chicken:
In a large skillet over medium heat, heat olive oil and 1 tablespoon of butter. Cook chicken for about 4 minutes per side or until golden and cooked through. Remove from skillet and set aside.
Make the Sauce:
Add remaining butter to the same pan. Sauté smashed garlic cloves for about 30 seconds or until fragrant. Pour in the chicken broth and scrape the pan to loosen any browned bits. Simmer for a few minutes to reduce slightly.
Add Cream:
Lower the heat and stir in the heavy cream and garlic powder. Simmer for 3–5 minutes, until the sauce thickens. Season with additional salt and pepper if needed.
Finish the Dish:
Return chicken to the pan and spoon the sauce over it. Simmer for another 2–3 minutes to heat through. Serve warm with your choice of sides.
