Hibachi Chicken is a beloved Japanese-inspired dish that’s quick to prepare and packed with flavor. Traditionally cooked on a large, flat-top grill, this at-home version captures the essence of the restaurant-style favorite using a skillet or wok. The chicken is seared to golden perfection and coated in a rich, savory sauce that balances sweetness and umami. For the Chicken:
1 lb boneless, skinless chicken breasts, cut into bite-sized cubes
1 tablespoon butter
1 teaspoon garlic, minced
1/4 teaspoon sesame oil (optional)
For the Sauce:
1 1/2 tablespoons soy sauce
1 1/2 tablespoons teriyaki sauce or mirin
Freshly ground black pepper, to taste
Optional Yum-Yum Sauce:
1 cup mayonnaise
1 tablespoon melted butter
1/2 tablespoon Sriracha or ketchup
1/4 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/8 teaspoon cayenne pepper
1 tablespoon sugar
1 tablespoon mirin (optional)
1–2 tablespoons water (to thin out as needed)
In a small bowl, combine soy sauce, teriyaki sauce or mirin, and pepper. Set aside.
Heat a large skillet or wok over medium-high heat and melt the butter. Add the minced garlic and cook for about 30 seconds until fragrant.
Add the chicken pieces and cook for 3–4 minutes, stirring occasionally, until lightly browned.
Pour the sauce over the chicken and continue to cook for another 3–5 minutes, stirring frequently, until the chicken is fully cooked and the sauce has thickened slightly.
Drizzle with sesame oil if using.
Serve immediately with rice, noodles, or stir-fried vegetables.
To make the optional yum-yum sauce:
Whisk together all sauce ingredients in a bowl until smooth. Add water to adjust consistency. Refrigerate for at least 15 minutes before serving.
