Ingredients:
For the Gochujang Chicken Burgers:
1 lb. ground chicken
1/2 cup panko breadcrumbs
2 tablespoons gochujang sauce
1/2 teaspoon garlic powder
1 teaspoon coarse kosher salt
Avocado oil or olive oil for frying
For the Kimchi Bacon Jam:
6 slices bacon, cut into small pieces
1 1/2 cups kimchi, chopped into small pieces
2 tablespoons brown sugar
Burger Extras (Optional but Recommended):
Buns
Cheese (Gouda works great)
Cilantro or greens
Mayonnaise
Cucumber slices
Instructions:
Make the Kimchi Bacon Jam:
In a skillet over medium heat, cook the bacon pieces until crispy. If there’s a lot of fat, drain some off. Add chopped kimchi and brown sugar to the skillet. Cook everything together for 3–5 minutes until the mixture becomes jammy and caramelized. Set aside.
Prepare the Chicken Patties:
In a bowl, mix the ground chicken with panko, gochujang, garlic powder, and salt until fully combined. Shape the mixture into 4 or 5 patties.
Cook the Burgers:
Heat a little oil in a skillet over medium heat. Cook each patty for 5–7 minutes on each side or until fully cooked through (internal temp should reach 160°F). If you’re adding cheese, place it on the patties in the last minute of cooking to melt.
Assemble the Burgers:
Toast the burger buns. Spread mayo on the bottom bun, add a chicken patty, then top with kimchi bacon jam, cucumber slices, and cilantro or greens. Add the top bun and serve immediately.
