4 slices of bread (such as sourdough or your preferred type)
2–4 tablespoons of butter
7 oz (approximately 200g) of chorizo, casing removed and cut into chunks
¼ cup of red onions, thinly sliced
¼ cup of sharp cheddar cheese, shredded
¼ cup of pepper jack cheese, shredded
2 teaspoons of olive oil
2 tablespoons of fresh cilantro, chopped
Sauté the Aromatics:
In a small pan over medium-high heat, add the olive oil. Once hot, add the thinly sliced red onions and sauté for 1–2 minutes until they begin to soften. Add the chopped cilantro and cook for an additional 30 seconds. Remove from heat and set aside.
Assemble the Sandwiches:
Lay out the four slices of bread. On two slices, evenly distribute the shredded pepper jack cheese. Add the cooked chorizo chunks on top of the cheese layer. Spread the sautéed onion and cilantro mixture over the chorizo. Sprinkle the shredded sharp cheddar cheese over the onions. Top each with the remaining slices of bread to form two sandwiches.
