Ingredients:
For the Chicken and Marinade:
4 boneless, skinless chicken breasts
½ cup Italian dressing
⅓ cup ranch dressing
For the Cheese Topping:
4 ounces Provolone cheese, shredded or diced
⅓ cup freshly grated Parmesan cheese
⅓ cup ranch dressing
For the Breadcrumb Topping:
½ cup panko breadcrumbs
¼ cup freshly grated Parmesan cheese
1½ teaspoons garlic powder
3 tablespoons salted butter, melted
For Cooking:
2 tablespoons vegetable oil
Instructions:
Marinate the Chicken:
In a large bowl, whisk together the Italian dressing and ranch dressing.
Add the chicken breasts, coating them completely. Cover and refrigerate for at least 30 minutes, or overnight for best flavor.
Prepare the Cheese Topping:
In a medium bowl, combine Provolone cheese, Parmesan cheese, and ranch dressing. Stir and microwave in 30-second intervals, mixing until melted and smooth. Set aside.
Prepare the Breadcrumb Topping:
In another bowl, mix panko breadcrumbs, Parmesan cheese, garlic powder, and melted butter until fully coated. Set aside.
Cook the Chicken:
Preheat your oven’s broiler on low and move the rack to the middle.
Heat an oven-safe skillet over medium heat and add vegetable oil.
Remove chicken from marinade, letting excess drip off. Cook in the skillet for 5 minutes on each side until golden and the internal temperature reaches 165°F (74°C).
Assemble and Broil:
Spread the cheese topping evenly over each chicken breast.
Sprinkle the breadcrumb topping on top.
Broil for 3–5 minutes, watching closely, until the cheese is melted and the breadcrumbs are golden.
Serve:
Remove from oven and serve hot. This dish pairs perfectly with mashed potatoes, vegetables, or a fresh salad.
