Mini Quiche Bites with Phyllo Crust are delightful, bite-sized appetizers perfect for brunches, parties, or as a savory snack. For the Phyllo Crust:
15 sheets (½ package) phyllo dough
6 tablespoons butter, melted
Cooking spray
For the Quiche Filling:
4 eggs
½ cup heavy cream
Salt and pepper, to taste
Optional Add-Ins:
½ pound raw chorizo, cooked and crumbled
½ cup basil pesto (homemade or store-bought)
Prepare the Phyllo Crust:
Preheat the oven to 375°F (190°C). Lightly spray a mini muffin tin with cooking spray.
Place one sheet of phyllo dough on a flat surface. Keep the remaining sheets covered with a damp towel to prevent drying.
Brush the sheet lightly with melted butter. Layer another sheet on top and repeat the process until you have a stack of 5 sheets.
Cut the stacked phyllo into 3½-inch squares or rounds. Gently press each piece into the mini muffin tin wells to form cups.
Repeat the process to make a total of 24 phyllo cups.
Bake the phyllo cups for 8–10 minutes or until the edges are lightly golden. Remove from the oven and let them cool completely.
Prepare the Filling:
In a bowl, whisk together the eggs and heavy cream. Season with salt and pepper to taste.
For chorizo quiches, place a few pieces of cooked chorizo into the bottom of each phyllo cup.
For pesto quiches, add a small spoonful of pesto into each cup.
Pour the egg mixture over the fillings in each cup, filling them just below the rim.
Bake the Quiches:
Preheat the oven to 400°F (200°C).
Bake the filled phyllo cups for 10–12 minutes or until the egg filling is set and slightly puffed.
Remove from the oven and let them cool slightly before serving.
These mini quiches are best served warm but can also be enjoyed at room temperature. They make excellent appetizers for gatherings or can be part of a brunch spread. Pair them with a fresh salad or fruit platter for a complete meal.
