This Keto Strawberry Shortcake features tender, buttery low-carb biscuits layered with juicy fresh strawberries and fluffy whipped cream. It’s the perfect guilt-free indulgence for anyone following a keto or low-carb lifestyle. The biscuits are made with almond flour and sour cream, creating a flaky and satisfying texture without using traditional wheat flour. When paired with naturally sweet strawberries and lightly sweetened whipped cream, this dessert becomes a refreshing and satisfying treat that won’t derail your carb count.
For the Biscuits:
2 cups blanched almond flour
1 tablespoon baking powder
¼ teaspoon salt
½ teaspoon xanthan gum
½ cup cold unsalted butter, cubed
¼ cup sour cream
1 large egg
For the Whipped Cream:
1 cup heavy cream
2 tablespoons powdered sugar-free sweetener
½ teaspoon vanilla extract
For the Strawberries:
Fresh strawberries, chopped (about 2 medium strawberries per shortcake)
1. Prepare the Biscuits:
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the almond flour, baking powder, salt, and xanthan gum.
Add in the cold cubed butter and use a pastry cutter or your fingers to cut it into the flour mixture until it forms coarse crumbs.
Stir in the sour cream and egg until a dough forms.
Place the dough on a sheet of parchment paper and gently flatten it to about ¾ inch thickness.
Use a biscuit cutter or round glass to cut out about 10 biscuits and place them on the prepared baking sheet.
Bake for 12–15 minutes, or until lightly golden. Remove and let cool before slicing.
2. Make the Whipped Cream:
In a chilled mixing bowl, beat the heavy cream until it begins to thicken.
Add the powdered sweetener and vanilla extract. Continue beating until stiff peaks form. Chill until ready to use.
3. Assemble the Shortcakes:
Slice each biscuit in half horizontally.
Layer the bottom half with fresh chopped strawberries and a generous spoonful of whipped cream.
Top with the other half of the biscuit and add more whipped cream and strawberries if desired.
Serve immediately.
