For Caramel:

    - 300 gr đường

    -150 ml water + 100 gr hot water

For FLAN

    - 1 quart milk

    - 300 gr whole eggs (ab 5)

    - 175 gr egg yolk (ab 8)

    - 100 gr sugar

yield: 25 ea

Make caramel: ab 25 min:

    - pour water into sugar, NO-STIR - on medium fire for ab 20-min

    - add 100 hot water (slowly by 3-4 times)

    - finished at 25th min (add 2-3 min if need darker)

(be careful: very hot)

    - pour in cups, put in frigid ab 10-15 min

Be careful when STEAMING:

    - medium fire

    - cover cup loosely

    - open bowl's cover every 10-min

total steam time: ab 25-min
