Miso Soup
If you get find a good hondashi (look for an MSG-free one) you can save time. See HONDASHI MISO for an alternate recipe.
YOU WILL NEED
- Kombu (dried kelp)
- bonito flakes
- wakame (seaweed) or fresh spinach
- tofu
- red miso (akamiso)
- white miso (shiromiso)
- green onions
METHOD
Combine in a large bowl:
- 6 cups water
- 1/4 ounce kombu
Let sit 30 minutes. Strain out kombu and discard. Bring water to a boil in a saucepan. Add:
- 1 cup bonito flakes
Remove from heat and let sit two minutes
Strain, discarding solids and bring back to a boil. Remove from heat and whisk in:
- 2 T red miso
- 4 T white miso
Add wakame, cubed tofu and sliced green onions and serve. Itadakimasu!
