Black Beans for a Mexican Dinner

Black Beans for a Mexican Dinner
These cook up in about 10 minutes.

Serves 4-6 as a side dish

INGREDIENTS
1-2 t canola oil
1 clove garlic, pressed
1/4 to 1/2 medium onion, finely chopped
One can black beans

OPTIONAL:
1 T cilantro, finely chopped
1 T cotija, crumbled or grated or sour cream

METHOD
Heat the canola oil over medium heat in a small-medium saucepan

Add the onion and garlic and gently saute - about 2-3 minutes.

Add the beans and stir to combine. Cook for about 5-7 minutes.

Add cilantro, and salt and pepper to taste.

Transfer to a bowl and top with cotjia or a small dollop of light sour cream.
