Egg Mess

Serves 1-2, depending on how big of a breakfast you like

YOU WILL NEED:

  • Spouted Bread - from Trader Joe's or Alvarado Street Bakery
  • Canola Oil spray


INGREDIENTS

  • 2 eggs
  • 2 pieces sprouted bread (Trader Joe's or Alvarado Street) 
  • Salt and freshly ground pepper

METHOD

Preheat a small nonstick pan over  a medium flame

Lightly toast two slices of bread.

Spritz the hot pan with a canola spray and crack eggs into pan. Sprinkle with salt and cook until set. Flip gently and cook another 30-60 seconds, depending on how soft you like your eggs but know that over-easy cooking allows the egg to saturate the toasted bread.

Remove toast from toaster and tear into bite-sized pieces and put in a cereal bowl.

Transfer cooked eggs from pan to bowl and cut into bite-sizes pieces.

Top with several turns of freshly ground pepper and turn to combine the eggs and toast. Enjoy immediately.
