Cream Cheese Frosting

Such a great frosting. I use it on carrot, banana and coconut cake and on pumpkin cupcakes. Make sure to cream the butter very well in the first step. If you don't you'll end up with lumpy frosting, and no amount of mixing will smooth it out.

Makes 2 cups - or enough to frost a 9-inch, two-layer cake

Cream well, using the paddle attachment on a mixer:

  • 4 oz unsalted butter, softened a bit

Add and mix well:

  • 1 # cream cheese (Philly's is always the best bet)

Add:

  • 1-2 t vanilla extract (always pure. Always.)

Add, mixing on low speed until just combined:

  • 2 ¼ cups sifted powdered sugar
