This is the standard at Pinch. If you're a novice to making dressings know that you can adjust the amounts of oil and vinegar to suit your palate. Just don't be afraid of salt and pepper. The dressing will be the seasoning for a whole bunch of greens and it should be saturated in flavor.
INGREDIENTS:
5T olive oil
3 T red wine vinegar
half clove of garlic, pressed
1 T crumbled Gorgonzola
Kosher salt and fresh ground pepper
1 pear (don't slice it until you're ready to serve the salad)
One head red leaf lettuce or a comparable amount of spring mix
METHOD:
Pour the oil and vinegar into a salad bowl.
Add the garlic, salt, pepper and Gorgonzola. Mash with a fork to combine.
Quarter and core a pear and thinly slice, adding to dressing.
Taste and adjust seasoning as necessary.
