This is the standard at Pinch. If you're a novice to making dressings know that you can adjust the
amounts of oil and vinegar to suit your palate. Just don't be afraid of
salt and pepper - or sugar. The dressing will be the seasoning for a
whole bunch of greens and it should be saturated in flavor.
INGREDIENTS:
- 5T olive oil
- 3 T red wine vinegar
- half clove of garlic, pressed
- 1 T crumbled Gorgonzola
- Kosher salt and fresh ground pepper
- 1 pear
- Sugar, as necessary
- One head red leaf lettuce or a comparable amount of spring mix
METHOD:
Pour the oil and vinegar into a salad bowl.
Add the garlic, salt, pepper and Gorgonzola. Mash with a fork to combine.
Quarter and core a pear and thinly slice, adding to dressing.
Taste and adjust seasoning as necessary. When adding pear to a salad I don't add the sugar unless it's necessary. A very ripe pear is quite sweet and you won't need to add sugar.
