I couldn't begin to decide whether to file this under BREAKFAST or SIDES, owing to my recent BBQ revelation. 

Still, I have a deep affinity for cornbread with honey in the morning. 

Preheat oven to 400°

Spray an 8-inch square baking pan with canola spray.

Sift together:

  • 1 cup flour
  • 1 cup cornmeal
  • ¼ cup sugar
  • 1 T baking powder
  • 1 t salt

Whisk together:

  • 1 egg
  • 1 cup buttermilk
  • 2 T canola oil

Add liquid to dry ingredients and combine swiftly, without overmixing. Turn batter into prepared pan and bake for about 15 minutes or until the top is golden and the sides begin to pull away from the edge of the pan. 

Cool for 10-15 minutes before cutting.

It's really good with Honey Butter!

Combine equal parts honey and butter and stick in the oven with the cornbread until the butter has melted.
