Lentil Soup
If you start your kids on this early they may just love it as much as my niece and nephew.
When kids like lentils, they love them with elbow pasta.
YOU WILL NEED
1 1/2 cups Lentils - I generally use the green ones
1/2 cup chopped carrot
1/2 cup chopped celery
I small diced Onion (about 1/2 cup)
1 clove garlic, finely chopped
parmesan, both grated to serve and a rind
1 14 oz can diced diced tomatoes (about 1 1/2 cups fresh chopped tomatoes)
2 T red wine
1 1/2 T brown sugar
1 T red wine vinegar or fresh lemon juice
METHOD
Place the lentils 4-5 cups water, 1 t kosher salt and the heel of a piece of parmesan in a covered saucepan. Bring to a boil, cover and simmer 3-4 hours
Saute the garlic, onion, celery and carrot in 1 T of olive oil, along with a pinch of chili flakes
Add to lentils when they are done simmering.
Also add the tomatoes, red wine, wine vinegar brown sugar.
Stir and bring back to a boil, then simmer about 20 minutes. Adjust seasoning and serve with fresh Parmesan.
