Lentil Soup

If you start your kids on this early they may just love it as much as my niece and nephew. 

When kids like lentils, they love it with elbow pasta.

YOU WILL NEED

  • lentils
  • carrot
  • celery
  • onion 
  • parmesan 

METHOD
Place in a covered saucepan and simmer 3-4 hours:

  • 3 cups lentils, rinsed
  • 7 cups water or stock
  • 2 t salt
  • heel of a Parmesan wedge (the hard end)

Saute and add to lentils (after they have simmered):

  • 2 t garlic
  • 1 cup onion, finely chopped
  • 1 cup celery, finely chopped
  • 1 cup carrot , finely chopped

Add:

  • 1 1/2 cup chopped tomatoes
  • 2 T red wine
  • 2 T lemon juice
  • 1 1/2 T brown sugar
  • 1 T red wine vinegar

Serve with fresh Parmesan.
