Light Granola


This is based on a recipe from Martha Stewart.

Makes 4 cups

INGREDIENTS
3 cups old-fashioned rolled oats
1/4 cup sweetened shredded coconut
1/4 cup sliced almonds 
1 tablespoon flax meal (ground flax seeds)
1 tablespoon sunflower seeds
1 tablespoon pumpkin seeds
3 tablespoons vegetable oil
3 tablespoons honey


METHOD
Preheat oven to 350 degrees or 300 convection. In a mixing bowl, combine the canola oil and honey. Add the oats, and all other ingredients and stir well to combine. Bake, tossing occasionally, until lightly toasted, 15 minutes. Let cool completely.

Store in an airtight container for up to 1 month. Add dried fruit as desired.
