Benihana's Ginger Salad Dressing
I'm a sucker for hibachi and will never turn down an invitation to Benihana or Gasho. This is a very close approximation of the starter salad.
Combine in a blender or mini-prep cuisinart:
¼ cup onion, chopped
¼ cup peanut oil (I often substitute healthier canola oil or cut the peanut oil with half canola)
2 T rice vinegar
1 T fresh ginger, finely chopped
1 T celery, finely chopped
1 T soy sauce
3 T tomato sauce or juice
2 t sugar
Juice of ½ lemon
Blend altogether and taste for seasoning, adding extra ginger or lemon as needed.
Drizzle over iceberg lettuce and eat with wooden chopsticks.
