Combine in a blender or mini-prep cuisinart:
- ¼ cup onion, chopped
- ¼ cup peanut oil (I often substitute healthier canola oil or cut the peanut oil with half canola)
- 2 T rice vinegar
- 1 T fresh ginger, finely chopped
- 1 T celery, finely chopped
- 1 T soy sauce
- 3 T tomato sauce or juice
- 2 t sugar
- Juice of ½ lemon
Blend altogether and taste for seasoning, adding extra ginger or lemon as needed.
Drizzle over iceberg lettuce and eat with wooden chopsticks.
