Benihana Salad

I'm a sucker for hibachi and will never turn down an invitation to Benihana or Gasho. 

This is a very close approximation of the starter salad.

Combine in a blender or mini-prep cuisinart:

  • ¼ cup onion, chopped 
  • ¼ cup peanut oil (I often substitute healthier canola oil or cut the peanut oil with half canola)
  • 2 T rice vinegar
  • 1 T fresh ginger, finely chopped
  • 1 T celery, finely chopped
  • 1 T soy sauce
  • 3 T tomato sauce or juice
  • 2 t sugar
  • Juice of ½ lemon

Blend altogether and taste for seasoning, adding extra ginger or lemon as needed.

Drizzle over iceberg lettuce and eat with wooden chopsticks.
