Borscht

    • Medium sized onion
    • 1 Small potato
    • 1lb (450g) raw beetroot
    • Olive oil
    • 2 pints Veg Stock
    • 3 table spoon cider vinegar (I left this out)
    • 1 teaspoon Marmite
    • Sour Cream
    1. Chop Veg
    2. Fry Onions for 10 min
    3. Add everything and simmer for 30 mins
    4. Liquidise
    5. Add cream before serving
