Sponge Cake (buns)

    • 6oz SR flour
    • 1.5 tspn baking powder (if plain flour)
    • 6 oz Margarine or butter (1 oz less for buns)
    • 6 oz Castor Sugar
    • 3 medium or large eggs
    • Bun casings

Makes 24 buns (1.5 tspns per bun)

    1. Sieve the flour +baking powder
    2. Cream fat and sugar until soft and white
    3. Break eggs and beat
    4. Add eggs a little at a time with a little flour into the mixture
    5. Fold in the remaining flour
    6. Bake at gas mark 4.5 for 12 to 15 mins

3/4 of 150g bar cooking choc will top 12 buns

2oz butter plus 4 to 5oz sugar icing will top 12 buns
