Sponge Cake (buns)
- 6oz SR flour
- 1.5 tspn baking powder (if plain flour)
- 6 oz Margarine or butter (1 oz less for buns)
- 6 oz Castor Sugar
- 3 medium or large eggs
- Bun casings
Makes 24 buns (1.5 tspns per bun)
- Sieve the flour +baking powder
- Cream fat and sugar until soft and white
- Break eggs and beat
- Add eggs a little at a time with a little flour into the mixture
- Fold in the remaining flour
- Bake at gas mark 4.5 for 12 to 15 mins
3/4 of 150g bar cooking choc will top 12 buns
2oz butter plus 4 to 5oz sugar icing will top 12 buns
