Grandma's Tasty Fish Pie
From Annabel Karmel's baby and toddler book
- 450g cod or haddock fillets skinned (we used salmon and smoke haddock)
- seasoned flour
- 1 beaten egg
- 100g breadcrumbs
- vegetable oil
- 1 onion
- 2 peppers (red and green)
- 400g tinned tomatoes
- 2 table spoons tomato puree
- half teaspoon soft brown sugar
Sauce
- 25g butter
- 1 table spoon plain flour
- 250ml milk
- 75g cheddar cheese
- 40g Parmesan cheese (swapped this for cheddar)
- Preheat oven to 180C Gas Mk 4
- Cut fish fillets into about 12 peices
- Dip in flour then egg then bread crumbs
- Saute in vegetable oil until golden on both sides
- Fry the onion 3-4 mins
- Add the peppers and fry for further 5 mins
- Add tomatoes, tomato puree and sugar
- Cook for 5 mins
- Mix with fish
- Add to oven proof dish
- Make cheese sauce (2/3 of cheese)
- Pour sauce over the fish
- Sprinkle remain cheese
- Place in oven for 20mins
