Oil
2 onions
Plain flour
600ml guinness
3 carrots peeled and sliced
thyme
1 clove garlic
1 bay leaf
1 teaspoon redcurrent jelly
300ml stock
1 teaspoon tomato puree
Brown the meat in batches
Fry onions for 10 mins
Then fry garlic for 1 min
Return the meat
Add the flour cook for 2 mins
Add everything else
Simmer
Cover with cartouche to stop top leyer drying
1.5 hrs in oven at 140\C Gas Mark 1 or until meat is tender
