Beef in Guinness
- 1.3kg beef
- Oil
- 2 onions
- Plain flour
- 600ml guinness
- 3 carrots peeled and sliced
- thyme
- 1 clove garlic
- 1 bay leaf
- 1 teaspoon redcurrent jelly
- 300ml stock
- 1 teaspoon tomato puree
- Brown the meat in batches
- Fry onions for 10 mins
- Then fry garlic for 1 min
- Return the meat
- Add the flour cook for 2 mins
- Add everything else
- Simmer
- Cover with cartouche to stop top leyer drying
- 1.5 hrs in oven at 140\C Gas Mark 1
- Or until meat is tender
