Beef in Guinness

    • 1.3kg beef
    • Oil
    • 2 onions
    • Plain flour
    • 600ml guinness
    • 3 carrots peeled and sliced
    • thyme
    • 1 clove garlic
    • 1 bay leaf
    • 1 teaspoon redcurrent jelly
    • 300ml stock
    • 1 teaspoon tomato puree
    1. Brown the meat in batches
    2. Fry onions for 10 mins
    3. Then fry garlic for 1 min
    4. Return the meat
    5. Add the flour cook for 2 mins
    6. Add everything else
    7. Simmer
    8. Cover with cartouche to stop top leyer drying
    9. 1.5 hrs in oven at 140\C Gas Mark 1
