Eve's Pudding

Batter is a bit dry and difficult to spread over the apples.

A delicious combination of apples and sponge cake. Ideal for later in the summer when apples are in plentiful supply. Great hot or cold with custard or cream.

    • 2 or 3 Large Cooking Apples
    • 75g Sugar
    • 1 tablespoon of water
    • 110g Butter
    • 2 eggs, beaten
    • 150g self-raising flour
    1. Pre-heat the oven to gas 5 or 190 centigrade.
    2. Core, peel and slice the apples thickly and place in an oven-proof dish with 60g of the sugar and the tablespoon of water. Cover loosely and place in the oven for 10 - 15 minutes. (could have done with another 5 mins or maybe the oven was not hot enough)
    3. Place the butter and remaining sugar in a mixing bowl and cream together. Mix in the eggs and then add the flour and mix to a stiff consistency adding a little more water or milk if too firm.
    4. Remove the stewed apples from the oven and spread the batter over the top. Return the dish to the oven and cook for 30 minutes until golden. Check if cooked by inserting a sharp knife into the top of the pudding, if it comes out clean the topping is cooked.
