Roasted Cashews

Recipe from the Cranks cookbook - called Tamari. Itbsp oil, 1lb cashew nuts, 2 tbsp soy sauce. Pour oil into a baking tin, add nuts and turn them in the oil. Roast in oven 180C for about 15 mins, turning occasionally. (The nuts, not you).Sprinkle the soy sauce over and stir till nuts well coated. Return to the oven for 5 minutes (the nuts, not you). Leave to cool and stir in an airtight container.

I didn't do that amount and think 15 minutes could be too long for roasting - use your eyes!

Store in an airtight container - do not stir

  • 400g unsalted cashews
  • 1 tsp five spice powder
  • 1/4 tsp chilli powder
  • 3 tbs reduced salt soy sauce
  • 1 tsp sesame oil
    1. Preheat oven to 18O’C.
  1. Put the nuts in a bowl and mix to combine. Add the five spice powder and chilli powder and toss the nuts in the spices.
  2. Pour over the combined soy sauce and sesame oil and mix until all the nuts are coated.
  3. Spread the nuts out on a non stick baking tray and bake for 15 minutes or until the nuts start to dry out and the soy coating darkens. Cool.

Could also add raw almonds, macadamias, unsalted raw peanuts
