Pot-roast Pork with endives

- 700g bonded pork loin, rind removed
- butter
- oil
- 4 large endives (chicory)
- 2 (or 3) =shallots
- 300ml dry cider
- splash cider vinegar
- Sage
- 2 cloves garlic bruised
- Fry pork in the oil
- set aside the pork
- Add butter
- Fry endives then shallots and garlic
- Return to the pot and add the other ingredients
- Bake at 180C for 2 hours (turn pork after 1 hour)
- Thicken the sauce with rue
