Pot-roast Pork with endives

    • 700g bonded pork loin, rind removed
    • butter
    • oil
    • 4 large endives (chicory)
    • 2 (or 3) =shallots
    • 300ml dry cider
    • splash cider vinegar
    • Sage
    • 2 cloves garlic bruised
    1. Fry pork in the oil
    2. set aside the pork
    3. Add butter
    4. Fry endives then shallots and garlic
    5. Return to the pot and add the other ingredients
    6. Bake at 180C for 2 hours (turn pork after 1 hour)
    7. Thicken the sauce with rue
