Beef in Oyster Sauce

    • 350g fillet of beef
    • 1 teaspoon light soy sauce
    • 1 tablespoon oyster sauce
      • plus one teaspoon
    • 1 pinch sugar
    • 2 tablespoons groundnut oil
    • 3 garlic cloves crushed
    • 1 medium chilli de-seeded and finely chopped
    • 200g baby white stemmed pak choy, sliced in half
    • salt and ground pepper
    1. Prepare fillet of beef by hammering with a meat cleaver (or similar)
    2. Slice thinly, season with oyster sauce, sugar, salt & pepper
    3. Heat wok over a high heat, add the l teaspoon groundnut oil. Add the garlic, chilli and toss quickly.
    4. Add the pak choy, stir fry for 1 min, season with salt and 1 teaspoon of oyster sauce.
    5. Transfer the pak choy to serving plate
    6. Heat wok over a high heat add the remaining groundnut oil
    7. Add the beef slices, stir fry for 1 - 2 minutes
    8. To serve place the the beef slices on the pak choy.
