Low Carb Coconut Cookies

There are times when you want something to satisfy your sweet tooth on the go. These simple to make low carb gluten free cookies are a great snack.

    • 3/4 cup (85g) coconut flour sifted
    • 1½ teaspoons baking powder
    • 1/4 teaspoon salt
    • 6 tablespoons (85g) butter
    • 1/3 cup (70g) coconut oil
    • 3/4 cup (140g) Swerve or other low carb sweetener
    • 4 large eggs
    • 1 tablespoon almond milk
    • 1 teaspoon vanilla extract
    1. Stir together coconut flour, baking powder and salt.
    2. In separate bowl, beat butter and coconut oil together; add sweetener and beat until fluffy.
    3. Add eggs, almond milk, and vanilla; beat well.
    4. Add dry ingredients to wet mixture, beating until well combined.
    5. Scoop dough onto ungreased cookie sheet or silicon mat and flatten out to desired thickness.
    6. Bake at 375°F (185C) for 8-10 minutes or until edges start to brown.
