125g butter
250g sultanas
250g currents
180g soft brown sugar
1 teaspoon mixed spice
1 teaspoon ginger
250ml water
2 large eggs
150g plain flour
150g self raising flour
1teaspoon bicarbonate of soda
Boil ingredients
Leave to cool
Add the beaten eggs
Then the sifted flour and bicarb
Bake at 180C in 22cm tin for 1 hour
Check skewer in the middle comes out clean.
