Boil and Bake Cake
Similar to recipe from Harry Brussalis
- 125g butter
- 250g sultanas
- 250g currents
- 180g soft brown sugar
- 1 teaspoon mixed spice
- 1 teaspoon ginger
- 250ml water
- 2 large eggs
- 150g plain flour
- 150g self raising flour
- 1teaspoon bicarbonate of soda
- Boil ingredients
- Leave to cool
- Add the beaten eggs
- Then the sifted flour and bicarb
- Bake at 180C in 22cm tin for 1 hour
- Check skewer in the middle comes out clean.
