Boil and Bake Cake

• • 125g butter

  • 250g sultanas

  • 250g currents

  • 180g soft brown sugar

  • 1 teaspoon mixed spice

  • 1 teaspoon ginger

  • 250ml water

  • 2 large eggs

  • 150g plain flour

  • 150g self raising flour

  • 1teaspoon bicarbonate of soda

• 1. Boil ingredients

  2. Leave to cool

  3. Add the beaten eggs

  4. Then the sifted flour and bicarb

  5. Bake at 180C in 22cm tin for 1 hour

  6. Check skewer in the middle comes out clean.
