Dundee Cake
- 5oz marg
- 5oz caster sugar
- 3 large eggs
- 8oz plain flower
- 1 teaspoon baking powder
- 6oz currents
- 6oz sultanas
- 2oz glace cherries (rinsed and dried)
- 2oz candied peel
- 2 table spoons ground almonds
- Grated rind on a lemon
- 2oz blanched almonds
- Mix the marg and sugar and then add the eggs
- Fold in the flour & baking powder
- Fold in everything else
- Place in a greased tin
- Bake for 2 to 2.5 hrs at 170C
