Dundee Cake

    • 5oz marg
    • 5oz caster sugar
    • 3 large eggs
    • 8oz plain flower
    • 1 teaspoon baking powder
    • 6oz currents
    • 6oz sultanas
    • 2oz glace cherries (rinsed and dried)
    • 2oz candied peel
    • 2 table spoons ground almonds
    • Grated rind on a lemon
    • 2oz blanched almonds
    1. Mix the marg and sugar and then add the eggs
    2. Fold in the flour & baking powder
    3. Fold in everything else
    4. Place in a greased tin
    5. Bake for 2 to 2.5 hrs at 170C
