Lakeshore Pork
- 1.3Kg diced leg of pork (well trimmed)
- Seasoned flour: salt, pepper, mustard powder and brown sugar
- olive oil
- 1pint apple juice
- 1/2 pint chicken stock
- 2 table spns whole grain mustard
- 1/2 pint cream
- Toss the pork in the seasoned flour
- Brown in frying pan
- Place in Casserole
- Add remaining ingredients (except cream)
- Bring to boil
- Place in oven for 1.5 hrs at 180C, Gas Mark 4
- Stir in the cream and return for a further 10mins
- Reduce sauce if required
