1.3Kg diced leg of pork (well trimmed)
Seasoned flour: salt, pepper, mustard powder and brown sugar
olive oil
1pint apple juice
1/2 pint chicken stock
2 table spns whole grain mustard
1/2 pint cream
Toss the pork in the seasoned flour
Brown in frying pan
Place in Casserole
Add remaining ingredients (except cream)
Bring to boil
Place in oven for 1.5 hrs at 180C, Gas Mark 4
Stir in the cream and return for a further 10mins
Reduce sauce if required
